Japanese Pickles Recipes - Garlic Pickled in Miso (Ninniku Miso-Zuke) Recipe

Ingredients

  • 3 bulbs garlic (5 oz/150 g), cloves peeled and left whole

  • 1 teaspoon salt

  • 5 tablespoons inaka miso

  • 4 tablespoons sugar


Method:

  1. Sprinkle the garlic with the salt and set aside for 3 hours. Pat dry with paper towels. Mix the miso and sugar until the sugar dissolves.

  2. Add the garlic cloves and set aside to marinate for 4 days before serving.
