Japanese Sauces and Batters Recipes - Chicken Yakitori Glaze (Tori Tare) Recipe

Ingredients

  • 1/2 cup (125 ml) chicken stock or 1/2 teaspoon chicken stock powder dissolved in 1/2 cup (125 ml) water

  • 1/3 cup (85 ml) sake

  • 1/2 cup (125 ml) mirin

  • 1/2 cup (125 ml) Japanese soy sauce

  • 2 tablespoons sugar


Method:

  1. Place all the ingredients into a small saucepan and bring to a boil. Reduce heat and simmer for 20 minutes, or until the sauce is reduced to half the original volume.

  2. The sauce keeps refrigerated for up to 1 month. Use this sauce for brushing when grilling chicken yakitori.
