Sashimi Soy Dip (Tosa Shoyu) Recipe
Ingredients

3 tablespoons
sake
-
1/2 cup (125 ml)
Japanese soy sauce
-
2 tablespoons tamari soy sauce or mirin
-
1 strip dried
kelp (konbu), (about 2 in/5 cm long),
wiped with a damp cloth

1/2 cup (5 g)
dried bonito flakes
Method:

Place all the
ingredients in a small saucepan and simmer on
medium low heat for 5 minutes. Allow to cool, then
strain and discard solids.

The sauce can be
stored for up to a year if kept refrigerated in a
jar. Use as a dipping sauce for sashimi.
