Japanese Sauces and Batters Recipes - Sashimi Soy Dip (Tosa Shoyu) Recipe

Ingredients

  • 3 tablespoons sake

  • 1/2 cup (125 ml) Japanese soy sauce

  • 2 tablespoons tamari soy sauce or mirin

  • 1 strip dried kelp (konbu), (about 2 in/5 cm long), wiped with a damp cloth

  • 1/2 cup (5 g) dried bonito flakes


Method:

  1. Place all the ingredients in a small saucepan and simmer on medium low heat for 5 minutes. Allow to cool, then strain and discard solids.

  2. The sauce can be stored for up to a year if kept refrigerated in a jar. Use as a dipping sauce for sashimi.
