Japanese Sauces and Batters Recipes - Sweet Vinegar (Amazu) Recipe

Ingredients

  • 1 cup (250 ml) water

  • 1/2 cup (125 ml) rice vinegar

  • 1/3 cup (60 g) sugar

  • 1 teaspoon salt


Method:

  1. Bring the water and vinegar to a boil in a saucepan, then add the remaining ingredients and stir to dissolve the sugar and salt. Remove from the heat and set aside to cool.

  2. Use for dipping and pickling vegetables. Keeps refrigerated for up to 10 days.
