Japanese Sushi Recipes - Beef Sushi Recipe

Ingredients

  • 1 cup (150 g) cooked Sushi Rice (see recipe)

  • 5 oz (150 g) prime marbled beef sirloin, very thinly sliced

  • 1 teaspoon crushed garlic

  • Shiso flowers or alternative garnish

  • Benitade or alfalfa sprouts, to garnish

  • 4 tablespoons pickled young ginger slices, to serve

  • Ponzu Dipping Sauce (see recipe), to serve or Sashimi Soy Dip (see recipe), to serve


Method:

  1. Make the Sushi Rice by preparing half of the amounts specified in the Sushi Rice recipe. While the rice is cooking, cut the beef into thin slices about 2 1/2 in (6 cm) long by 3/4 in (2 cm) wide by 1/4 in (3 cm) thick.

  2. Hold a beef slice in one hand and, using a small spoon, spread a little of the crushed garlic on it. Moisten your other hand and pinch a heaped tablespoonful of the Sushi Rice and form a small cylinder in the palm of your hand. Lay the rice onto the seasoned side of the beef and press lightly, for the beef to adhere to the rice.

  3. Arrange on a platter and garnish with the shiso flowers, benitade or alfalfa sprouts. Serve with the pickled ginger and Ponzu Dipping Sauce.
