Japanese Meat Recipes - Pork Stir-fried with Ginger and Vegetables

Ingredients

  • 1 lb (500 g) pork loin

  • 1 large onion, halved lengthwise and cut into thin slices

  • 1 tablespoon oil

  • 7 oz (200 g) cabbage cut into squares              

  • 1 cup (200 g) Japanese green peppers or bell peppers, deseeded and cut into squares

Seasoning

  • 4 teaspoons juice of grated young ginger

  • 3 tablespoons sake

  • 2-3 tablespoons Japanese soy sauce

  • 1 teaspoon dark soy sauce or tamari soy sauce

  • 2-3 teaspoons sugar


Method:

  1. Mix the ginger juice, soy sauces, sugar and sake together in a small bowl. Set the Seasoning aside.

  2. Slice the pork into very thin pieces. To thinly slice the pork, wrap it in plastic and place it in the freezer for 20 minutes or until it is half-frozen. Remove the plastic and slice the pork across the grain with a very sharp knife into very thin sheets.

  3. Heat 1/2 tablespoon oil in a frying pan or wok. Stir-fry the onions over high heat for 1 minute, then add the cabbage and green peppers and stir-fry for another 2 minutes. Remove and set aside.

  4. In the same pan, heat the remaining oil. Add the pork and stir-fry over very high heat for 5 minutes, or until it is cooked. Add the Seasoning and stir, then add the vegetables, mix well and serve hot with steamed rice and soup, if desired.
