Sushi Recipes - California Rolls

Ingredients

  • 12 medium prawns, peeled and deveined or 1 cup cooked crab meat

  • 1 large avocado

  • Juice from half a lemon

  • 4 sheets nori, toasted

  • 600 g (4 cups) cooked Sushi Rice

  • 8 lettuce leaves, coarsely cut

  • 3 tablespoons Homemade Japanese Mayonnaise mixed with 1 teaspoon wasabi paste

  • 3 tablespoons Pickled Ginger

  • 3 tablespoons salmon roe

  • 1 tablespoon toasted sesame seeds


Method:

  1. Poach the prawns and set aside to cool.

  2. Cut the avocado in half lengthwise. Remove the flesh and cut into strips about 1 cm (1/2 in) thick, keeping the pieces as long as possible. Drizzle with the lemon juice to prevent discoloration.

  3. To make the rolls, follow the directions for rolling sushi. Place 2 lettuce leaves down the mid­dle of the rice on each roll. Top with 3 prawns, placing them end to end along the center of the lettuce. Place the avocado strips e~ end to form a line next to the prawns.

  4. Spoon 1/4 of the mayonnaise on the prawns and add some of the Pickled Ginger, salmon roe and sesame seeds to the roll. Roll up like the sushi rolls and cut each roll into 8 slices.
