Sushi Recipes - Salmon Sushi Rolls with Mayonnaise and Fish Roe

Ingredients

  • 10 thin slices smoked salmon, about 60 g (2 oz)

  • 300 g (2 cups) cooked Sushi Rice

  • 3 tablespoons Homemade Japanese Mayonnaise

  • 1 teaspoon wasabi paste

  • 2 tablespoons flying fish roe or caviar

  • 2 tablespoons chives, thinly sliced


Method:

  1. Cover a bamboo mat with plastic wrap. Place 5 pieces of the smoked salmon on the mat and spread half of the Sushi Rice on top. Dab half of the wasabi along the center of the rice. 

  2. Lift the front of the mat and roll the sushi, applying even pressure. When the front of the mat is 2 cm (3/4 in) from the end of the-sushi, pull the mat and plastic wrap away from the sushi. Continue rolling the sushi. The salmon should make a spiral effect through the rice.

  3. Cut each roll into 8 uniform slices. Spoon 1/2 tea­spoon of the mayonnaise on top of each slice and gar­nish with the fish roe and chives.
