Sesame Omelet with Prawns
Ingredients
10 medium prawns, peeled and
deveined
250 ml (1 cup) water
3 tablespoons Homemade Japanese
Mayonnaise
1/2 teaspoon freshly ground
black pepper
1 Sesame Omelet (see above)
1/2 teaspoon fish sauce
4 sprigs watercress
Method:
Bpi! the prawns
in the water for 3 to 4 minutes, until they turn
pink. Remove and let cool. Slice the prawns into
small chunks and mix with the mayonnaise and black
pepper.
Lay the Sesame
Omelet on a flat work surface and spread the prawn
mixture across the center of the omelet. Sprinkle
the fish sauce over the prawn mixture, and place
the watercress sprigs in a line across the middle.
Carefully roll up
the omelet. Wrap it in plastic wrap and refrigerate
for about 10 minutes to help it retain its shape
before slicing into 10 or 12 pieces.
