Shiitake Mushroom Rolls
Ingredients
6 fresh shiitake mushrooms, stems discarded
1 teaspoon soy sauce
1 teaspoon sesame oil
1 teaspoon lemon juice
1 teaspoon mirin
1 tablespoon olive oil
1 Sesame Omelet
1 Spring onion, thinly sliced
1/2 green bell pepper, very thinly sliced.
Method:
Slice the
mushrooms across, very finely.
Combine the soy
sauce, sesame oil, lemon juice and mirin, and set
aside.
Heat the olive
oil in a small skillet and saute the mushrooms until
soft, about 2 minutes. Remove from the heat and pour
the soy mixture over the mushrooms. Stir well and
allow to cool completely.
Place the Sesame
Omelet on a flat work surface, with the seeds facing
down. Place the cooled mushroom mixture across the
center of the omelet. Sprinkle with the spring onion
and bell pepper.
Roll the omelet
over the filling, to form a cylinder with the
filling in the middle.
Slice the omelet
into quarters at an angle to serve as appetizers, or
slice into 10 to 12 smaller rounds for hors
d'oeuvres as shown.
