Sushi Recipes - Temaki Sushi with Asparagus and Smoked Trout

Ingredients

  • 3 sheets nori, toasted

  • 1 smoked trout, skinned and deboned

  • 1 tablespoon wasabi paste

  • 125 ml (1/2 cup) Homemade Japanese Mayonnaise

  • 1/4 teaspoon salt

  • 1/4 teaspoon freshly ground black pepper

  • 6 stalks fresh asparagus, trimmed and cooked Small bowl tezu

  • 300 g (2 cups) cooked Sushi Rice Soy Dipping Sauce


Method:

  1. Cut the toasted nor; into 4 squares.

  2. Combine the smoked trout, wasabi, mayonnaise, salt and black pepper in a mixing bowl.

  3. Trim the asparagus spears into 8-cm (3-in) lengths and cut in half crosswise to make 12 pieces.

  4. Place a nori square diagonally in your left hand, shiny side facing down. To make the rolls, moisten right hand with the tezu to prevent the rice from sticking. Place 2 tablespoons of the Sushi Rice on the nori square. Put 1 piece of the asparagus down the center of the rice and add 2 tablespoons of the trout mixture. Fold the edges of the nori in to form a cone­shaped roll. Seal with a little water. Repeat with the remaining ingredients.

  5. Serve with Soy Dipping Sauce.
