Thai Prawn California Rolls
Ingredients
12 medium prawns,
peeled and deveined
2 tablespoons
lemon juice
2 tablespoons
fish sauce 1 tablespoon palm sugar
1 spring onion,
thinly sliced
1 small chili,
thinly sliced
600 g (4 cups)
cooked Sushi Rice
4 sheets nori,
toasted
8
lettuce leaves,
roughly sliced
Japanese
cucumber, unpeeled and cut into strips
1/2 cup fresh
coriander leaves (cilantro)
Method:
Marinate the
prawns in the lemon juice, fish sauce, palm sugar,
spring onion and chili for 15 minutes.
Follow the
directions for making California Rolls.
Drain off excess liquid from the lettuce and place
it over the middle of the prepared rice.
Place 3 prawns
end to end along the center of the rice, then add a
strip of the Japanese cucumber and sprinkle with the
fresh coriander leaves. Repeat until all the
ingredients are used up.
