Asian Salad Recipes - Burma
Bean Salad (Pe-Ther Thoke) Recipe
Ingredients
For the dressing:
-
2 small red shallots
-
2
garlic cloves
-
2 small chilies
-
1 tablespoon sweet soy
sauce
-
2 tablespoons lime
juice
-
1 teaspoon sugar
-
salt to taste
-
1 tablespoon groundnut
oil
-
1 tablespoon finely
chopped coriander
Serves
4
Method
-
Bring a pan of
water
to the boil. Add the salt and lime zest. When the
water returns to the boil, add the beans and simmer for
5 minutes only.

Remove, drain well and arrange on a
serving platter. Set aside.

Prepare the dressing: in a mortar, pound the shallots,
garlic and chilies to
a paste. Add the soy sauce, lime juice, sugar and salt.
Mix well and pour over the beans.

Sprinkle with the oil,
then with the chopped coriander and serve.
