Asian Salad Recipes - Burma Bean Salad (Pe-Ther Thoke) Recipe

Ingredients

  • 1/2 teaspoon salt

  • zest of 1 small lime

  • 225g (8oz) French beans, halved

For the dressing:

  • 2 small red shallots

  • 2 garlic cloves

  • 2 small chilies

  • 1 tablespoon sweet soy sauce

  • 2 tablespoons lime juice

  • 1 teaspoon sugar

  • salt to taste

  • 1 tablespoon groundnut oil

  • 1 tablespoon finely chopped coriander

Serves 4


Method

  1. Bring a pan of water to the boil. Add the salt and lime zest. When the water returns to the boil, add the beans and simmer for 5 minutes only.

  2. Remove, drain well and arrange on a serving platter. Set aside.

  3. Prepare the dressing: in a mortar, pound the shallots, garlic and chilies to a paste. Add the soy sauce, lime juice, sugar and salt. Mix well and pour over the beans.

  4. Sprinkle with the oil, then with the chopped coriander and serve.
