Asian Salad Recipes - Burma Carrot Salad (Au-War-Thoke) Recipe

Ingredients

  • 4S0g (1lb) young carrots

  • 1/2 teaspoon salt

  • 1 tablespoon groundnut oil

  • 1 heaped tablespoon black mustard seeds

  • 1 tablespoon lime juice

  • 1 teaspoon sugar

Serves 4


Method

  1. Roughly grate the carrots into a bowl and sprinkle with salt. Stir well and leave for 1 hour.

  2. Heat the oil in a wok or frying pan and fry the mustard seeds until they begin to jump. Remove and leave to cool.

  3. In a small bowl, mix the lime juice and sugar. Stir until the sugar dissolves. Pour over the carrots and stir well.

  4. Garnish with the mustard sees.
