Carrot Salad (Au-War-Thoke) Recipe

Method

Roughly grate the carrots into a bowl and sprinkle with
salt. Stir well and leave for 1 hour.

Heat the oil in a
wok or frying pan and fry the mustard seeds until they
begin to jump. Remove and leave to cool.

In a small
bowl, mix the lime juice and sugar. Stir until the sugar
dissolves. Pour over the carrots and stir well.

Garnish
with the mustard sees.
