Asian Salad Recipes - Burma Chicken Liver Salad (Kyet-Athar Thoke) Recipe

Ingredients

  • 225g (8oz) chicken livers, roughly chopped

  • 2 tablespoons fish sauce

  • 1 teaspoon sugar

  • 1/2 teaspoon chili powder

  • 1 shallot, finely chopped

  • 2 large spring onions, thinly sliced into rounds

  • 2 tablespoons lemon juice

  • 1 level tablespoon chopped mint leaves

  • crisp salad, to serve

Serves 4


Method

  1. Put 3 tablespoons of water in a saucepan, add the chicken livers and bring to the boil. Reduce the heat and simmer until the livers are just cooked.

  2. Remove the pan from the heat, add all remaining ingredients and stir well. Turn out on to a serving dish and serve accompanied by the crisp salad.
