Asian Salad Recipes - Burma
Chicken Liver Salad (Kyet-Athar Thoke) Recipe
Ingredients

225g (8oz) chicken
livers, roughly chopped
-
2 tablespoons fish sauce
-
1 teaspoon sugar
-
1/2 teaspoon chili
powder
-
1 shallot, finely
chopped
-
2 large spring onions,
thinly sliced into rounds
-
2 tablespoons lemon juice
-
1 level tablespoon
chopped mint leaves
-
crisp salad, to serve
Serves
4
Method
-
Put 3 tablespoons of
water
in a saucepan, add the chicken livers and bring to the
boil. Reduce the heat and simmer until the livers are
just cooked.
-
Remove the pan from the heat, add all
remaining ingredients and stir well.
Turn out on to a serving dish and serve accompanied by
the crisp salad.
