Asian Salad Recipes - Burma
Ginger Salad (Gin Thoke) Recipe
Ingredients

150g
(5oz)
young fresh ginger, peeled and sliced into thin
matchsticks 2 tablespoons lime juice

1/2 teaspoon salt

1 tablespoon cooking oil
-
3 garlic cloves, thinly sliced
-
2 small fresh chilies, finely chopped
-
2 tablespoons ground dried shrimp
-
2 tablespoons ground roast peanuts
-
1 tablespoon dry-fried sesame seeds
-
1 tablespoon fish sauce

1 tablespoon lime juice

lettuce leaves, to serve

Method

The day before, put the ginger, lime juice and salt in a
bowl. Mix well, cover and leave for 24 hours.

Lift out the ginger with your hand and squeeze out as
much of the liquid as possible. Set aside.

Heat the oil
in a wok or frying pan and fry the garlic until crisp
and golden-brown. Set aside.

In a bowl, mix the ginger,
oil and garlic. Add each remaining ingredient in turn,
stirring after each addition.

Turn out on to a plate and
serve with the lettuce leaves as a side dish.
