Asian Salad Recipes - Burma Grilled Prawn and Bamboo Shoot Salad (Hmyit Thoke) Recipe

Ingredients

  • 10 large raw prawns

  • 150 g (5oz) bamboo shoots, thinly sliced

  • 2 tablespoons coconut cream, to garnish coriander leaves, to garnish 

For the dressing:

  • 2 tablespoons fish sauce

  • 2 tablespoons lime juice

  • 2 teaspoons sugar

  • 3 small red or green chilies, finely chopped

Serves 4


Method

  1. Preheat the grill to hot and grill the prawns in their shells until they just change color.

  2. When cool enough to handle, peel and devein them. Place the prawns on a serving bowl and set aside.

  3. Bring a pan of water to the boil and briefly blanch the bamboo shoots, remove and drain well, then add to the bowl with the prawns.

  4. Add all the dressing ingredients to the bowl and stir well.

  5. Garnish with coconut cream and a few coriander leaves and serve.
