Grilled Prawn and Bamboo Shoot Salad (Hmyit Thoke) Recipe
Ingredients

10 large raw prawns
-
150 g (5oz) bamboo
shoots, thinly sliced
-
2 tablespoons coconut cream,
to garnish coriander leaves, to garnish
For the dressing:

Method
-
Preheat
the
grill to hot and grill the prawns in their shells
until they just change color.
-
When
cool enough to handle, peel and devein them. Place
the prawns on a serving bowl and set aside.
-
Bring a pan of water to the boil and briefly blanch
the bamboo shoots, remove and drain well, then add
to the bowl with the prawns.
-
Add all the dressing
ingredients to the bowl and stir well.
-
Garnish with
coconut cream and a few coriander leaves and serve.
