Asian Salad Recipes - Burma Mango Salad (Thayethee Thocke) Recipe

Ingredients

  • 1 green (unripe) mango, peeled and grated into long thin strips

  • 1 level tablespoon crisp-fried garlic (see page 23), to garnish 

For the dressing:

  • 3 small red or green chilies

  • 1 teaspoon shrimp paste

  • 1 teaspoon tamarind water

  • 1 tablespoon fish sauce

  • 1 level tablespoon ground dried shrimp

  • 1 level tablespoon ground roast peanuts

  • 2 level teaspoons dry-fried sesame seeds

Serves 4


Method

  1. Place the mango strips in a serving bowl and set aside.

  2. Prepare the dressing: preheat a hot grill. Wrap the shrimp paste in foil and grill the parcel for 1 minute on each side. In another bowl, mix together the shrimp paste and all the remaining dressing ingredients.

  3. Pour the dressing over the mango and mix well. Garnish with crisp-fried garlic and serve.
