Mango Salad (Thayethee Thocke) Recipe
Ingredients

green (unripe) mango, peeled and grated into long
thin strips

1 level tablespoon crisp-fried garlic
(see
page
23), to garnish
For the dressing:

3
small red or green chilies
-
1
teaspoon shrimp paste
-
1
teaspoon tamarind water
-
1
tablespoon fish sauce
-
1
level tablespoon ground dried shrimp
-
1
level tablespoon ground roast peanuts
-
2
level teaspoons dry-fried sesame seeds
Serves
4
Method
-
Place the mango strips in a serving bowl and set
aside.

Prepare the dressing: preheat a hot grill.
Wrap the shrimp paste in foil and grill the parcel
for 1 minute on each side. In another bowl, mix
together the shrimp paste and all the remaining
dressing ingredients.

Pour the dressing over the
mango and mix well. Garnish with crisp-fried garlic
and serve.
