Asian Salad Recipes - Burma
Pork and Cucumber Salad (Wetha Thakwather Thoke) Recipe
Ingredients

1 cucumber,
halved,
deseeded and cut across into 5mm
(1/4
in)
crescents
-
about 1 liter (1 3/4 pints) white vinegar
-
1 level
tablespoon sugar
-
150g (5oz) pork fillet
For the
dressing:
-
2 teaspoons groundnut oil
-
1 tablespoon ground dried shrimp
-
2 level teaspoons dry-fried sesame seeds
-
2 level tablespoons crisp-fried shallots
Serves

Method
-
Arrange the
cucumber crescents
in a
shallow dish and pour over sufficient vinegar to cover.
Sprinkle with sugar and stir to mix.

Ensuring that all
the cucumber pieces are covered with the liquid, leave
to marinate for 5 - 6 hours.

Bring a pan of water to the
boil, add the pork and simmer for 10 minutes, or until
the pork is just cooked through. Remove and, when cool
enough to handle, slice thinly. Set aside.

When ready to
serve, remove the cucumber from the marinade and place
in a mixing bowl. Add the pork slices and mix well.

Add
all the dressing ingredients and mix well. Turn out on a
platter and serve.
