Fish with Green Tomato Salad
(Yoam Pengpok Dri Cha'aa) Recipe
Ingredients

6 large lettuce
leaves
-
3 green tomatoes,
sliced into small wedges
-
oil for deep-frying
-
1 medium trout or
similar firm fish, cleaned and filleted
For the dressing:
-
2 tablespoons fish
sauce
-
2 tablespoons lime
juice
-
1 level tablespoon
palm sugar
-
4 garlic cloves,
finely chopped
-
3 small shallots,
finely chopped
-
4 small red or green
chilies, finely chopped
Serves
4
Method:
-
Arrange the lettuce and tomato on a serving platter
and set aside.
-
Heat the oil for deep-frying to hot
but not sizzling and fry the whole trout fillets
until crispy. Drain on kitchen paper, place on the
salad and set aside.

Mix all the dressing
ingredients in a bowl until the sugar dissolves.
Pour over the fish and serve.
