Asian Salad Recipes -
Cambodia Egg and Sweet Pepper Salad
(Yoam Pong Sungao Mat Tet) Recipe
Ingredients
-
mixed seasonal salad
-
3 medium red or green
sweet peppers
-
2 large red
chilies
-
4 small red shallots
-
4 large garlic cloves
-
1 heaped tablespoon
ground dried shrimp, to garnish
-
2
hard-boiled eggs, shelled and quartered
-
coriander leaves, to
garnish
For the dressing:
-
2 tablespoons fish
sauce
-
1 teaspoon palm sugar
-
2 tablespoons lime juice
Serves

Method
-
Place the salad in a bowl and set aside.
-
Preheat a moderate grill and grill the sweet
peppers, chilies, shallots and
garlic until the skins of the sweet peppers are
blackened and blistered.
-
Remove from the heat and peel
away the loose skins. Cut all the grilled vegetables
into thin slices, place in the bowl with the salad and
set aside.

In another bowl, mix all the dressing
ingredients. pour over the salad and mix well.
-
Just
before serving, stir in the dried shrimp and turn out on
to a plate. Place the egg on top of the salad, garnish
with coriander leaves and serve.
