Cambodia Fried Beef with Green Papaya Salad
(Cha Sat Chalu Lahung) Recipe
Ingredients

275g
(10oz) entrecote steak, sliced across the grain into
2.5cm
(1in) strips
-
oil for deep-frying
-
150g (5oz) green (raw)
papaya, finely shredded
-
85g
(3oz) long beans, cut into
2.5cm
(1in) lengths
-
1 heaped tablespoon
ground roast peanuts
-
1 heaped tablespoon
ground dried shrimp
For the marinade:
-
3
tablespoons
fish sauce
-
1 tablespoon sesame
oil
-
2 level teaspoons
sugar
-
1/2 teaspoon ground
black pepper
-
for the dressing
-
3
garlic cloves,
finely chopped
-
3 small red
chilies,
finely chopped
-
2 tablespoons fish sauce
-
2 level teaspoons
sugar
-
2 tablespoons lime
juice
Serves
4
Method:
-
Mix all the marinade ingredients in a shallow dish,
add the strips of steak, toss to coat well and leave
to marinate for 3 hours.

Remove the meat from the
marinade. Heat the oil to sizzling-hot and briefly
deep-fry the steak strips until lightly browned.
Turn out to a plate and set aside.

Place the papaya
and long beans in a bowl, add all the dressing
ingredients and stir well.

Just before serving, add
the ground peanuts and dried shrimp. Stir, turn out
on to a plate and serve accompanied by the plate of
fried beef.
