Asian Salad Recipes - Cambodia Spicy Duck Salad

Ingredients

duck
breasts, finely chopped

1 level tablespoon
galangal, finely chopped
-
5 small red shallots,
thinly sliced

2 spring onions,
thinly sliced
-
1 heaped tablespoon
roughly chopped coriander leaves

2 tablespoons fish
sauce
-
1 heaped teaspoon
sugar
-
2 tablespoons lime
juice
-
1/2 teaspoon chili
powder
Serves

Method:
-
Arrange the salad on a plate and set aside.
-
Heat
3
tablespoons of water in a pan, add the duck and
simmer until cooked through, about 5 minutes. Remove
from the heat.
-
Add all the remaining ingredients and
mix well. Turn out on to a plate and serve accompanied by the salad.
