Asian Salad Recipes - Indonesian Cucumber and Bean Sprout Salad (Dabu Dabu Kenari) Recipe

Ingredients 

  • 225g (8oz) cucumber, peeled and sliced

  • 225g (8oz) beansprouts

  • 4 small shallots, thinly sliced

  • 10 sweet basil leaves

For the dressing:

  • 1/2 teaspoon shrimp paste

  • 3 tablespoons lime juice

  • 2 tablespoons hot water

  • 2 teaspoons sugar

  • 112 teaspoon salt

  • 4 small red and green chilies, finely chopped

Serves 4


Method

  1. Arrange the cucumber, beansprouts and shallots in a bowl and set aside.

  2. Prepare the dressing: preheat a hot grill, wrap the shrimp paste in foil and grill the parcel for 1 minute on each side. In another bowl, mix the grilled shrimp paste with all the remaining dressing ingredients and stir until the sugar dissolves.

  3. Pile the basil leaves on top of each other, roll tightly into a 'cigarette' and slice this across to make thin shreds.

  4. Pour the dressing over the salad, mix well, garnish with the basil shreds and serve.
