Pineapple and Shrimp Salad (Lalab Nenas Muda) Recipe
Ingredients

8 raw prawns
-
8 large lettuce
leaves, roughly broken up

1 small sweet red
pepper, deseeded and cut into long thin slices

1
pineapple, peeled, cored and cut into segments
-
1 tablespoon finely
chopped chives, to garnish
For the dressing:
-
1 tablespoon sweet soy
sauce
-
2 tablespoons lemon
juice
-
2 teaspoons sugar
-
3 small red
chilies,
finely chopped salt
Serves

Method
-
Bring a pan of water to the boil. Peel and devein the
prawns, then dip them in the boiling water until they
just change color.
-
Immediately remove and place them
briefly in cold water to stop the cooking process. Drain
well and set aside.
-
Arrange the lettuce and
sweet pepper on a serving dish and set aside.

Make the dressing by
mixing all the ingredients together in a bowl with salt
to taste, stirring
until the sugar dissolves.
-
Add the pineapple segments
and mix well. Turn the dressing out on to the salad,
garnish with chives and serve.
