Asian Salad Recipes - Indonesian Pineapple and Shrimp Salad (Lalab Nenas Muda) Recipe

Ingredients 

  • 8 raw prawns

  • 8 large lettuce leaves, roughly broken up

  • 1 small sweet red pepper, deseeded and cut into long thin slices

  • 1 pineapple, peeled, cored and cut into segments

  • 1 tablespoon finely chopped chives, to garnish

For the dressing:

  • 1 tablespoon sweet soy sauce

  • 2 tablespoons lemon juice

  • 2 teaspoons sugar

  • 3 small red chilies, finely chopped salt

Serves 4


Method

  1. Bring a pan of water to the boil. Peel and devein the prawns, then dip them in the boiling water until they just change color.

  2. Immediately remove and place them briefly in cold water to stop the cooking process. Drain well and set aside.

  3. Arrange the lettuce and sweet pepper on a serving dish and set aside.

  4. Make the dressing by mixing all the ingredients together in a bowl with salt to taste, stirring until the sugar dissolves.

  5. Add the pineapple segments and mix well. Turn the dressing out on to the salad, garnish with chives and serve.
