Spicy Chicken Salad with Ginger (Ayam Selada) Recipe
Ingredients

2 skinless chicken
breast fillets

1 teaspoon finely chopped ginger

1 onion, cut into
small cubes

1 red pepper,
deseeded and cut into small cubes

3 spring onions,
roughly chopped

8 Cos lettuce leaves,
to serve
For the dressing:
-
1 large garlic clove,
finely chopped
-
2 small red or green
chilies, finely chopped
-
2 tablespoons fish sauce
-
2 tablespoons lime
juice
-
2 tablespoons sugar

Method

Bring
a pan of water to the boil, add the chicken and simmer
until just cooked through, about 10 minutes. When cool
enough to handle, remove and, using the fingers, shred
into a large serving bowl.

Add the ginger, onion, red
pepper and spring onions to the chicken. Mix together
well and set aside.

Make the dressing by mixing all the
ingredients in a small bowl. Pour over the reserved
chicken mixture and stir well.

Serve the dressed mixture
in its bowl with the lettuce leaves on a serving dish.
Diners should spoon a little of the mixture on to a
leaf, fold it up around the filling, then eat it like a
sandwich.
Note:
This is really a starter, but would also make a rather
unusual canape.
