Asian Salad Recipes - Indonesian Spicy Chicken Salad with Ginger (Ayam Selada) Recipe

Ingredients 

  • 2 skinless chicken breast fillets

  • 1 teaspoon finely chopped ginger

  • 1 onion, cut into small cubes

  • 1 red pepper, deseeded and cut into small cubes

  • 3 spring onions, roughly chopped

  • 8 Cos lettuce leaves, to serve

For the dressing:

  • 1 large garlic clove, finely chopped

  • 2 small red or green chilies, finely chopped

  • 2 tablespoons fish sauce

  • 2 tablespoons lime juice

  • 2 tablespoons sugar

Serves 4


Method

  1. Bring a pan of water to the boil, add the chicken and simmer until just cooked through, about 10 minutes. When cool enough to handle, remove and, using the fingers, shred into a large serving bowl.

  2. Add the ginger, onion, red pepper and spring onions to the chicken. Mix together well and set aside.

  3. Make the dressing by mixing all the ingredients in a small bowl. Pour over the reserved chicken mixture and stir well.

  4. Serve the dressed mixture in its bowl with the lettuce leaves on a serving dish. Diners should spoon a little of the mixture on to a leaf, fold it up around the filling, then eat it like a sandwich.

Note: This is really a starter, but would also make a rather unusual canape.
