Asian Salad Recipes - Indonesian Spinach Salad (Lalab Bayam) Recipe

Ingredients 

  • 225g (8oz) baby spinach leaves

  • 1/4 teaspoon salt 

For the dressing:

  • 2 garlic cloves, finely chopped

  • 3 small red chilies, finely chopped

  • 2 tablespoons lime juice

  • 2 level teaspoons sugar

Serves 4


Method

  1. First make the dressing by mixing all the ingredients in a bowl, stirring until the sugar dissolves. Set aside.

  2. Remove any thick stalks from the spinach. Bring a pan of water to the boil, add the salt followed by the spinach.

  3. As soon as the water returns to the boil, remove the spinach, drain well and transfer to a serving platter.

  4. Cover the spinach with the dressing, stir well and serve.
