Steamed Mixed Vegetables with Spicy Coconut Dressing (Jangan
Olah) Recipe
Ingredients

100g (4oz) broccoli
-
100g (4oz) pumpkin,
peeled and cut into 2.5cm (1in) cubes
-
100g (4oz)
potatoes, peeled and cut into 2.5cm (1in) cubes
-
100g (4oz) French beans, halved
-
1 tablespoon
crisp-fried shallot, to garnish
For the dressing:
-
1 teaspoon shrimp
paste
-
4 garlic cloves,
roughly chopped
-
4 small shallots,
roughly chopped
-
2.5cm (1in) piece of
turmeric, peeled and roughly chopped
-
4 small red
chilies, roughly chopped
-
2 teaspoons palm sugar
-
225ml (8fl oz) coconut
milk
-
1/2 teaspoon salt
Serves

Method
-
First prepare the dressing: preheat a hot grill, wrap
the shrimp paste in foil and grill the parcel for 1
minute on each side.

In a mortar, pound the garlic,
shallots, turmeric, chilies and grilled shrimp paste,
mixing well. Add the palm sugar and mix well again. Add
the coconut milk together with an equal volume of water
and the salt. Stir well until the sugar and salt
dissolves. Set aside.

Cut away and discard most of the
broccoli's hard stems, leaving only the florets with a
short upper stem each. Bring some water to the boil in
the lower compartment of a steamer.

Place the pumpkin,
potatoes, broccoli and beans in the upper compartment
and steam for about 15 minutes, or until the vegetables
are just tender but still firm.

Transfer the vegetables
to a serving platter, pour over the dressing (it should
first be well mixed at the table), garnish with
crisp-fried shallot and serve.
