Fruit and Vegetable Salad with Shrimp Paste Dressing (Rojak) Recipe
Ingredients

1 small green mango,
peeled and sliced

1 small pineapple,
peeled, cored and cut into segments

1 cucumber,
thinly sliced

1 large carrot,
sliced into fine matchsticks
For the dressing:

Method
-
Arrange the salad ingredients in a bowl and set aside.

Make the dressing: preheat a hot grill. Wrap the shrimp
paste in foil and grill the foil parcel for 1 minute on
each side. In a mortar, pound the grilled shrimp paste
with all the other ingredients to a paste.

Add the paste
to the salad and mix well. Serve.
