Asian Salad Recipes - Malaysian Fruit and Vegetable Salad with Shrimp Paste Dressing (Rojak) Recipe

Ingredients 

  • 1 small green mango, peeled and sliced

  • 1 small pineapple, peeled, cored and cut into segments

  • 1 cucumber, thinly sliced

  • 1 large carrot, sliced into fine matchsticks 

For the dressing:

  • 1 teaspoon shrimp paste

  • 2 large garlic cloves

  • 2 or 3 small red chilies

  • 1 tablespoon tamarind water

  • 1 tablespoon sugar

  • salt

Serves 4


Method

  1. Arrange the salad ingredients in a bowl and set aside.

  2. Make the dressing: preheat a hot grill. Wrap the shrimp paste in foil and grill the foil parcel for 1 minute on each side. In a mortar, pound the grilled shrimp paste with all the other ingredients to a paste.

  3. Add the paste to the salad and mix well. Serve.
