Asian Salad Recipes - Oyster Salad
(Yam Hoy Nang Rom)

Ingredients

mixed seasonal salad
-
1 young lemon grass stalk, thinly sliced
-
4 small red shallots, thinly sliced
-
1 level tablespoon ginger that has been cut into
thin strips
-
3 garlic cloves, thinly sliced
-
3 small red chili, finely chopped
-
2 tablespoons fish sauce
-
2 teaspoons palm sugar
-
4 tablespoons lemon juice
-
1 dozen fresh oysters, off the shell
-
10 mint leaves, roughly chopped, to garnish
Serves

Method:
-
Arrange the salad on a serving platter and set
aside.
-
Put all the remaining ingredients except
the oysters and mint in a bowl, mix well and set
aside.
-
Bring a pan of water to the boil,
momentarily dip the oysters in the water, drain well
and place in the bowl with the salad.
-
Stir well,
turn out on to the platter with the salad and serve.
