Asian Salad Recipes - Oyster Salad (Yam Hoy Nang Rom) Recipe

Ingredients

  • mixed seasonal salad

  • 1 young lemon grass stalk, thinly sliced

  • 4 small red shallots, thinly sliced

  • 1 level tablespoon ginger that has been cut into thin strips

  • 3 garlic cloves, thinly sliced

  • 3 small red chili, finely chopped

  • 2 tablespoons fish sauce

  • 2 teaspoons palm sugar

  • 4 tablespoons lemon juice

  • 1 dozen fresh oysters, off the shell

  • 10 mint leaves, roughly chopped, to garnish

Serves 4


Method:

  1. Arrange the salad on a serving platter and set aside.

  2. Put all the remaining ingredients except the oysters and mint in a bowl, mix well and set aside.

  3. Bring a pan of water to the boil, momentarily dip the oysters in the water, drain well and place in the bowl with the salad.

  4. Stir well, turn out on to the platter with the salad and serve.
