Philippines Banana Blossom Salad (Ensaladang Pusa Ng
Saging) Recipe
Ingredients
-
6 lettuce leaves
-
1 banana flower (prepared as described)
-
3 small sweet peppers
(one each red, yellow and green), deseeded and finely diced
-
60g (2oz) boiled
crab meat, to garnish
For the dressing:
-
2 tablespoons white
vinegar
-
2 garlic cloves,
finely chopped
-
2 teaspoons sugar
-
1 teaspoon olive oil
-
1/2 teaspoon salt
-
1/4 teaspoon ground
black pepper
Serves
4
Method
-
Arrange the lettuce leaves on a serving platter and set
aside.
-
Make the dressing by mixing together all the ingredients
in a bowl and set aside.
-
Bring a pan of water to the
boil and briefly blanch the banana flower petals. Drain
well and place in a bowl.
-
Add the sweet peppers, mix
well, then add the dressing and mix well again.
-
Place
the dressed salad on top of the lettuce leaves and
garnish with crab meat to serve.
