Philippines Corn, Sweet Pepper and Crab Meat Salad (Ensaladang
Mais at Siling Makupa Na May Alimasag) Recipe
Ingredients

60g (2oz) cooked crab
meat

1 small onion, finely
chopped

2 large garlic
cloves, finely chopped

100g (4oz) cooked sweetcorn kernels

2 small sweet peppers
(1 green and 1 red), deseeded and finely diced

2
spring onions, thinly sliced

2 tablespoons coconut
cream
-
1 level teaspoon
grated ginger
-
1 level tablespoon
finely chopped coriander
-
2 small red
chilies,
finely chopped

salt and pepper
Serves

Method
-
In a bowl, mix the crab meat with onion and garlic. Set
aside.

In another bowl, mix all the remaining
ingredients with salt and pepper to taste.

Turn out on
to a serving platter, arrange the crab at the centre and
serve.
Note:
This dish was served with pieces of pork crackling,
which can easily be bought, ready-cooked, in packets.
