Asian Salad Recipes - Philippines Mixed Cooked Vegetable Salad (Halo Luto Gulay Ensalada) Recipe

Ingredients 

  • 3 carrots, cut into thin matchsticks

  • 100g (4oz) French beans, halved

  • 100g (4oz) cauliflower, broken into florets

  • 100g(4oz) bamboo shoots

  • 100g (4oz) okra, cut at an angle into 2.5cm (1in) lengths

  • 60g (2oz) beansprouts

  • 1 teaspoon salt

  • 2 tablespoons dry-fried sesame seeds

  • 2 tablespoons crisp-fried shallots

  • 2 tablespoons groundnut oil

Serves 4


Method

  1. Bring a pan of water to the boil and briefly blanch each vegetable in turn, ensuring they remain firm: the carrots for the longest (about 5 minutes); the beansprouts the briefest (about 30 seconds). Drain each well and place in a serving bowl.

  2. When all the vegetables are in the bowl, add all the remaining ingredients, stir well and serve.
