Gulay Ensalada) Recipe
Ingredients

3 carrots, cut into
thin matchsticks

100g (4oz) French
beans, halved
-
100g (4oz)
cauliflower, broken into florets
-
100g(4oz) bamboo
shoots
-
100g (4oz) okra, cut
at an angle into 2.5cm (1in) lengths
-
60g (2oz) beansprouts
-
1 teaspoon salt
-
2 tablespoons
dry-fried sesame seeds
-
2 tablespoons
crisp-fried shallots
-
2 tablespoons
groundnut oil
Serves
4
Method
-
Bring a pan of water
to the boil and briefly blanch each vegetable in turn,
ensuring they remain firm: the carrots for the longest
(about 5 minutes); the beansprouts the briefest (about
30 seconds). Drain each well and place in a serving
bowl.

When all the vegetables are in the bowl, add all
the remaining ingredients, stir well and serve.
