Asian Salad Recipes - Philippines Roasted Eggplant Salad (Ensaladang Talong) Recipe

Ingredients 

  • mixed seasonal salad

  • 2 large purple aubergines

  • 2 garlic cloves, finely chopped

  • 1 medium onion, finely chopped

  • 1 large tomato, finely diced

  • 1 small green sweet pepper, deseeded and finely diced

  • 2 tablespoons white vinegar

  • 1 tablespoon olive oil

  • 1 teaspoon sweet soy sauce

  • 1 teaspoon honey

  • 1/2 teaspoon grated ginger 

  • ground black pepper

  • 1 teaspoon dry-fried sesame seeds

Serves 4


Method

  1. Preheat a hot grill. Arrange the salad leaves on a serving platter and set aside.

  2. Grill the aubergines until their skin blacken. When cool enough to handle, peel away the skin, then place the flesh in a bowl and mash it with a fork.

  3. Add all the other ingredients and mix well.

  4. Turn the contents of the bowl out on to the platter at the centre of the salad leaves and serve.
