Philippines Roasted Eggplant Salad (Ensaladang Talong) Recipe
Ingredients

mixed seasonal salad

large purple aubergines
-

garlic cloves, finely chopped

medium onion, finely chopped

1
large tomato, finely diced

1
small green sweet pepper,
deseeded
and finely diced

2 tablespoons white vinegar
-
1
tablespoon olive oil
-
1
teaspoon sweet soy sauce

1
teaspoon honey
-
1/2
teaspoon grated ginger
-
ground black pepper
-
1
teaspoon dry-fried sesame seeds
Serves

Method
-
Preheat a hot grill. Arrange the salad leaves on a
serving platter and set aside.
-
Grill the aubergines until their skin blacken. When cool
enough to handle, peel away the skin, then place the
flesh in a bowl and mash it with a fork.

Add all the
other ingredients and mix well.
-
Turn the contents
of the bowl out on to the platter at the centre of
the salad
leaves and serve.
