Philippines Salad of Water Spinach with Chilies in
Coconut Cream (Gising Gising) Recipe
Ingredients
-
150g (5oz) water
spinach
(morning glory)
-
2 tablespoons cooking
oil
-
2 garlic cloves,
finely chopped
-
85g (3oz) minced pork
-
85g (3oz) chopped
prawn
-
2 tablespoons fish
sauce
-
2 teaspoons sugar
-
4 tablespoons coconut
cream
-
2 small red or green
chilies, finely chopped
Serves

Method
-
Bring a pan of
water to the boil.
Discard any
leaves
from the water spinach
and cut the stems into lcm (1/2in) rounds.
-
Briefly
blanch these stems in the boiling water and drain well.
Arrange on a platter and set aside.

Heat the oil in a
frying pan or wok and fry the garlic until golden brown.
Add the pork, stir well and simmer until cooked through,
about 2-3 minutes.

Then add the chopped prawn and mix
well. Add all the remaining ingredients
and stir
well.

Pour over the water spinach stems and serve.
