Asian Salad Recipes - Philippines Salad of Water Spinach with Chilies in Coconut Cream (Gising Gising) Recipe

Ingredients 

  • 150g (5oz) water spinach (morning glory)

  • 2 tablespoons cooking oil

  • 2 garlic cloves, finely chopped

  • 85g (3oz) minced pork

  • 85g (3oz) chopped prawn

  • 2 tablespoons fish sauce

  • 2 teaspoons sugar

  • 4 tablespoons coconut cream

  • 2 small red or green chilies, finely chopped

Serves 4


Method

  1. Bring a pan of water to the boil. Discard any leaves from the water spinach and cut the stems into lcm (1/2in) rounds.

  2. Briefly blanch these stems in the boiling water and drain well. Arrange on a platter and set aside.

  3. Heat the oil in a frying pan or wok and fry the garlic until golden brown. Add the pork, stir well and simmer until cooked through, about 2-3 minutes.

  4. Then add the chopped prawn and mix well. Add all the remaining ingredients and stir well.

  5. Pour over the water spinach stems and serve.
