Philippines Sweet Potato and Chicken Salad (Camote Manok
Ensalada) Recipe
Ingredients

150g (5oz)
sweet potato
-
85g (3oz) carrots
-
1 onion, roughly diced
-
2 cooked skinless
chicken breast fillets, finely shredded
-
6 Cos lettuce leaves, roughly shredded
For the dressing:

Method
-
Bring a pan of water to the boil. Peel the sweet
potato and carrots and then cut them into 1cm
(1/2in) cubes.

Boil the carrot cubes for 5 minutes
and the sweet potato for 5 to 7 minutes, until just
tender but still firm. Drain well and put in a bowl.

Add the onion and the shredded chicken, mix well and
set aside.

Arrange the lettuce leaves on a serving
platter and set aside.

Make the dressing by mixing
the ingredients together well in a small bowl with
salt to taste.

Pour the dressing into the bowl with
the chicken mixture and stir well. Turn out on to
the lettuce leaves and serve.
