Asian Salad Recipes - Philippines Sweet Potato and Chicken Salad (Camote Manok Ensalada) Recipe

Ingredients 

  • 150g (5oz) sweet potato

  • 85g (3oz) carrots

  • 1 onion, roughly diced

  • 2 cooked skinless chicken breast fillets, finely shredded

  •  6 Cos lettuce leaves, roughly shredded

For the dressing:

  • 3 tablespoons lemon juice

  • 1/2 teaspoon ground black pepper salt

Serves 4


Method

  1. Bring a pan of water to the boil. Peel the sweet potato and carrots and then cut them into 1cm (1/2in) cubes.

  2. Boil the carrot cubes for 5 minutes and the sweet potato for 5 to 7 minutes, until just tender but still firm. Drain well and put in a bowl.

  3. Add the onion and the shredded chicken, mix well and set aside.

  4. Arrange the lettuce leaves on a serving platter and set aside.

  5. Make the dressing by mixing the ingredients together well in a small bowl with salt to taste.

  6. Pour the dressing into the bowl with the chicken mixture and stir well. Turn out on to the lettuce leaves and serve.
