Asian Salad Recipes - Singaporean Chicken Salad with Sesame Dressing (Bon Bon Ji)Recipe

Ingredients

  • 2 skinless chicken breast fillets

  • 1 whole small head of Chinese celery (or substitute a large head of Western celery)

  • 1 tablespoon sesame oil

  • 3 spring onions, thinly sliced, to garnish

for the dressing

  • 2 tablespoons light soy sauce

  • 1 teaspoon sugar

  • 1 teaspoon chili oil

  • 1 heaped teaspoon sesame seeds

Serves 4


Method

  1. Bring a pan of water to the boil, add the chicken and simmer until just cooked through, about 8 minutes. When cool enough to handle, remove and shred into a bowl with your hands.

  2. Break up the celery, discarding any hard outer pieces. Cut off the broad hard section near the base of each piece to leave a stem of equal width, top and bottom. Pull away any leaves at the top and set these aside. Chop the celery into thin matchsticks.

  3. Place the chopped celery, the reserved leaves and the shredded chicken in a bowl, cover with sesame oil, stir well and set aside.

  4. Make the dressing by mixing all the ingredients in a small bowl and set aside.

  5. Pour the dressing over the chicken and celery mixture. Stir well and turn out on to a serving plate. Garnish with the spring onion and serve.
