Hot and Sour Cabbage Salad (Suan La Pai Chai) Recipe
Ingredients

450g
(1lb)
white
cabbage
-
2 tablespoons
vegetable oil

2 large dried red
chilies, roughly chopped

1 teaspoon salt
-
1 tablespoon brown
sugar
-
1 tablespoon light soy
sauce
-
2 tablespoons rice
vinegar
-
1 teaspoon sesame oil

Method
-
Cut the
cabbage leaves into small pieces about 2.5x1cm (1x
1/2in).

Heat the oil in a wok or frying pan and fry the
chilies
briefly. Add the cabbage and stir-fry for 2 minutes.

Add
the salt and sugar, and stir-fry for 1 minute more. Add
the soy sauce, vinegar and sesame oil.

Quickly stir
well, then turn out on to a dish and serve.
