Ingredients

225g (8oz) bamboo
shoots, shredded with a fork

4 garlic
cloves, finely chopped

1 tablespoon fish
sauce
-
1 tablespoon liquid
from pickled fish
-
2 tablespoons lime
juice
-
2 level teaspoons
sugar
-
1/2 teaspoon chili
powder
-
4 small shallots,
thinly sliced
-
2 heaped tablespoons
roughly chopped coriander leaves
-
1 level tablespoon
dry-fried sesame seeds
-
1 level tablespoon
ground dry-fried rice
Serves

Method:
-
Heat
2 tablespoons of water in a saucepan, add the
shredded bamboo shoots and gently simmer for 1
minute.
-
Add all the remaining ingredients, stir
well, turn out on to a plate and
serve.
