Asian Salad Recipes - Thai Hot and Sour Papaya Salad

Ingredients

3 garlic cloves
-
4 small red or green chilies
-
150g (5oz) raw, green papaya, peeled and finely
shredded into long strips

1 tomato, cut into wedges
-
1 tablespoon pickled fish
-
2
tablespoons lime juice
-
1 tablespoon palm sugar
-
crisp salad, to serve

Method:
-
In a mortar, pound together the garlic and
chilies,
then add each ingredient except the salad,
-
Pound
each in turn and ensuring that it is well mixed in
the length of time depends on the texture of each,
thus the papaya
will
need longer than the garlic.
-
When the liquids are
well absorbed and the sugar dissolved, turn out on
to a serving platter and serve accompanied by the
salad.
