Asian Salad Recipes - Thai Lao Salad (Salat) Recipe

Ingredients

  • 6 large lettuce leaves

  • 1 cucumber, thinly sliced

  • 1 red and 1 green sweet pepper, cored, deseeded and thinly sliced

  • 3 hard-boiled eggs, shelled and quartered

  • coriander leaves, to garnish

For the dressing:

  • 175g (6oz) minced pork

  • 2 tablespoons fish sauce

  • 2 level teaspoons sugar

  • 2 small red or green chilies, finely chopped

  • 2 tablespoons lime juice

  • 1 tablespoon garlic oil

  • 1 heaped tablespoon ground roast peanuts

Serves 4


Method:

  1. Arrange the lettuce, cucumber and pepper slices on a serving platter, place the egg quarters on the salad and set aside. 

  2. Prepare the dressing: heat 3 tablespoons of water in a pan, add the pork together with all the dressing ingredients except the garlic oil and the peanuts and simmer until the pork is just cooked through, about 2 - 3 minutes.

  3. Remove from the heat. Add the garlic oil and ground peanuts, and stir well Turn out on to the salad platter, garnish with coriander leaves and serve.
