Ingredients

6 large lettuce
leaves
-
1 cucumber, thinly
sliced

1 red and 1 green
sweet pepper, cored, deseeded and thinly sliced

hard-boiled eggs, shelled and quartered

coriander leaves, to
garnish
For the dressing:

Method:

Arrange
the lettuce, cucumber and pepper slices on a serving
platter, place the egg quarters on the salad and set
aside.

Prepare the dressing: heat 3
tablespoons of water in a pan, add the pork together
with all the dressing ingredients except the garlic
oil and the peanuts and simmer until the pork is
just cooked through, about 2 - 3 minutes.

Remove
from the heat. Add the garlic oil and ground
peanuts, and stir well Turn out on to the salad
platter, garnish with coriander leaves and serve.
