Asian Salad Recipes - Thai Spicy Fried Egg Salad

Ingredients

3 tablespoons cooking
oil
-
4 eggs
-
5 lettuce leaves
-
1 onion, thinly sliced
1 tomato, thinly sliced
For the dressing:
-
2 tablespoons lime
juice
-
2 tablespoons fish
sauce
-
2 level teaspoons
sugar
-
4 small red or green
chilies, finely chopped
-
5 small red shallots,
thinly sliced

Method:
-
Heat the oil in a frying pan and fry the eggs,
turning once to cook the yolk. Carefully remove the
eggs from the pan, allow them to cool and then cut
them into squares. Set aside.

In a bowl, prepare
the dressing by mixing all the ingredients, stirring
well until the sugar is dissolved. Set aside.

Arrange the remaining salad ingredients on a serving
platter, then arrange the egg squares on top. Pour
over the dressing and serve.
