Ingredients

225g
(5oz)
fresh squid,
cleaned and roughly chopped
-
1 young lemon grass
stalk, thinly sliced

1
heaped teaspoon finely chopped galangal
-
4
small red shallots, thinly sliced

3
spring onions, roughly chopped

4
small red chilies, finely chopped
-
1
heaped tablespoon roughly chopped coriander
-
1
tablespoon fish sauce
-

level teaspoons sugar

2
tablespoons lime juice

1
heaped tablespoon ground dry-fried rice crisp salad,
to serve

Method:
-
Place 2 tablespoons of water in a pan. Add the squid
and bring to a simmer.
-
Add all the remaining
ingredients except the rice and salad, stir well and
simmer for 1 minute.
-
Remove from the heat, stir in
the rice, turn out on a serving plate and serve
accompanied by the crisp salad.
