Asian Salad Recipes - Thai Squid Salad (Laab Pla Muk) Recipe

Ingredients

  • 225g (5oz) fresh squid, cleaned and roughly chopped

  • 1 young lemon grass stalk, thinly sliced

  • 1 heaped teaspoon finely chopped galangal

  • 4 small red shallots, thinly sliced

  • 3 spring onions, roughly chopped

  • 4 small red chilies, finely chopped

  • 1 heaped tablespoon roughly chopped coriander

  • 1 tablespoon fish sauce

  • 2 level teaspoons sugar

  • 2 tablespoons lime juice

  • 1 heaped tablespoon ground dry-fried rice crisp salad, to serve

Serves 4


Method:

  1. Place 2 tablespoons of water in a pan. Add the squid and bring to a simmer.

  2. Add all the remaining ingredients except the rice and salad, stir well and simmer for 1 minute.

  3. Remove from the heat, stir in the rice, turn out on a serving plate and serve accompanied by the crisp salad.
