Asian Salad Recipes - Thai Sweet Corn Salad

Ingredients

100g (4oz) pork fillet
-
225g (8oz) boiled
sweet corn segments
-
1 carrot, sliced into
thin matchsticks
-
1 heaped tablespoon
crisp-fried shallots
-
1 heaped
tablespoon crisp-fried garlic
-
1 heaped tablespoon
crisp-fried kaffir lime leaf
For the dressing:
-
3 garlic cloves,
finely chopped
-
3 small red
chilies,
finely chopped
-
2 tablespoons fish sauce
-
1 heaped teaspoon
sugar
-
2 tablespoons lemon
juice
Serves

Method:
-
Bring a pan of just
enough water to cover the pork to the boil. Add the
pork and boil until just cooked through, about 3
minutes.
-
When cool enough to handle, remove and cut
across the grain into thin strips.
-
Put the pork in
a bowl with all the remaining salad ingredients and
set aside.
-
In another bowl, mix all the dressing
ingredients together well. Pour over the salad, toss
and serve.
