Asian Salad Recipes - Thai Sweet Corn Salad (Yam Kowpohd) Recipe

Ingredients

  • 100g (4oz) pork fillet

  • 225g (8oz) boiled sweet corn segments

  • 1 carrot, sliced into thin matchsticks

  • 1 heaped tablespoon crisp-fried shallots

  • 1 heaped tablespoon crisp-fried garlic

  • 1 heaped tablespoon crisp-fried kaffir lime leaf

For the dressing:

  • 3 garlic cloves, finely chopped

  • 3 small red chilies, finely chopped

  • 2 tablespoons fish sauce

  • 1 heaped teaspoon sugar

  • 2 tablespoons lemon juice

Serves 4


Method:

  1. Bring a pan of just enough water to cover the pork to the boil. Add the pork and boil until just cooked through, about 3 minutes.

  2. When cool enough to handle, remove and cut across the grain into thin strips.

  3. Put the pork in a bowl with all the remaining salad ingredients and set aside.

  4. In another bowl, mix all the dressing ingredients together well. Pour over the salad, toss and serve.
