Asian Salad Recipes - Vietnamese Egg Salad (Rau Tron Don Gian) Recipe

Ingredients

  • 1 small lettuce, finely shredded

  • 100g (4oz) cucumber, peeled and cut lengthwise into strips about 7.5­10cm (3-4in) long

  • 100g (4oz) carrot, peeled and lengthwise into strips 7.5-10cm (3-4in)

  • 100g (4oz) beansprouts

  • 2 tablespoons chopped mint leaves

  • 2 tablespoons dry-fried sunflower seeds

  • 2 hard-boiled eggs, shelled and thinly sliced

For the dressing:

  • 2 tablespoons fish sauce

  • 2 tablespoons lemon juice

  • 1 tablespoon white wine vinegar

  • 2 garlic cloves, finely chopped

  • 1 teaspoon sugar

  • 2 small red chilies, finely chopped

Serves 4


Method

  1. First make the dressing: mix all the ingredients in a small bowl.

  2. Arrange the lettuce, vegetables and mint in a serving bowl, add the dry fried sunflower seeds and the dressing, and toss well.

  3. Arrange the egg slices on top of the tossed salad and serve.
