Egg Salad (Rau Tron Don Gian) Recipe
Ingredients

small lettuce, finely shredded

(4oz)
cucumber,
peeled and cut lengthwise into strips about 7.510cm
(3-4in) long

100g
(4oz) carrot, peeled and lengthwise into strips
7.5-10cm (3-4in)

100g (4oz) beansprouts
-

tablespoons chopped mint leaves
-

tablespoons dry-fried sunflower seeds
-
2
hard-boiled eggs, shelled and thinly sliced
For the dressing:

tablespoons fish sauce

tablespoons lemon juice

tablespoon white wine vinegar

2 garlic cloves,
finely chopped

teaspoon sugar

small red chilies, finely chopped
Serves

Method
-
First make the dressing: mix all the ingredients in a
small bowl.
-
Arrange the lettuce, vegetables and mint in
a serving bowl, add the dry fried sunflower seeds and
the dressing, and toss well.

Arrange the egg slices on
top of the tossed salad and serve.
