Asian Salad Recipes - Vietnamese Minced Pork, Prawn and Pineapple Salad Recipe

Ingredients

  • 225g (8oz) lean minced pork

  • 225g (8oz) cooked prawns, finely chopped

  • 2 tablespoons fish sauce

  • 2 tablespoons lemon juice

  • 1 teaspoon sugar

  • 1/2 teaspoon chili powder

  • 2 tablespoons finely chopped spring onion

  • 4 tablespoons pineapple that has been diced into small cubes about 1cm (1/22in) square

  • 1 tablespoon finely slivered ginger

  • 2 tablespoons finely chopped coriander

  • 2 tablespoons ground roasted peanuts

  • 10 firm lettuce leaves, to serve

Serves 4


Method

  1. Bring 2 tablespoons of water to the boil in a saucepan, add the pork and boil until it is cooked through, about 5 minutes.

  2. Add all the other ingredients, lower the heat and simmer for 5 minutes more.

  3. Put a dollop of the mixture on each lettuce leaf and serve as canapes.
