Minced Pork, Prawn and Pineapple Salad Recipe
Ingredients

225g (8oz)
lean minced pork

225g (8oz)
cooked prawns, finely chopped

tablespoons fish sauce
-
2
tablespoons lemon juice
-
1 teaspoon sugar
-
1/2 teaspoon chili powder
-
2
tablespoons finely chopped spring onion

4 tablespoons pineapple that has been diced into
small cubes about 1cm (1/22in) square

1 tablespoon finely slivered ginger
-
2 tablespoons finely chopped coriander
-
2
tablespoons ground roasted peanuts
-
10 firm lettuce leaves, to serve

Method
-
Bring 2 tablespoons of water to the boil in a saucepan,
add the pork and boil until it is cooked through, about
5 minutes.

Add all the other ingredients, lower the heat
and simmer for 5 minutes more.

Put a dollop of the
mixture on each lettuce leaf and serve as canapes.
