Spicy Squid Salad (Goi Mue) Recipe
Ingredients

1 medium-sized
(450g/1lb) squid, skinned and cleaned

1 large
tomato, sliced into thin wedges
-
20 holy basil
leaves
-
1 large onion,
sliced into thin wedges
-
1 tablespoon dry-fried white sesame seeds coriander leaves, to garnish
For the dressing:
-
2 tablespoons fish
sauce
-
4 tablespoons lime
juice
-
1 tablespoon sugar
-
1 large garlic clove,
finely chopped
-
2 or more small
chilies, finely chopped
Serves

Method

Preheat a hot grill. Spread the squid on a cutting board
and, with a sharp knife, cut a light criss-cross pattern
over it.

Grill each side for 3 - 4 minutes, then cut the
squid into narrow strips about 2.5 cm (1in) wide. These
will curl up into attractively patterned morsels. Set
aside.

Place all the remaining salad ingredients in a
bowl and add the reserved squid.

Make the dressing by
whisking all the ingredients together in a bowl and pour
over the salad.

Toss well, garnish with coriander and
serve.
