Asian Salad Recipes - Vietnamese Tropical Fruit Salad (Hua Qua Tron) Recipe

Ingredients

  • 1 small pineapple, peeled, cored and cubed

  • 1 ripe mango, peeled, sliced from stone and roughly chopped

  • 2 large bananas, cut into thin rounds

  • 10 lychees, outer shells and stones removed, then quartered

  • 1 orange, peeled, broken into segments and roughly chopped

For the dressing:

  • 600ml (1 pint) water

  • 6 tablespoons sugar

  • 2 tablespoons finely chopped ginger

  • 2 pieces of star anise

  • 1 cinnamon stick

  • 1 clove

  • 1 tablespoon lemon juice

  • 10 mint leaves, finely chopped

Serves 4


Method

  1. First make the dressing: heat the water and dissolve the sugar, then add all the other ingredients except the lemon juice and mint. Stir well and leave to cool.

  2. Arrange the fruit in a serving bowl. Add the lemon juice and chopped mint to the dressing. Stir well, add to the salad and mix well.

  3. Chill in the fridge before serving.
