Chicken Recipes - Barbecued Chicken

Ingredients

  • 6 large chicken thigh joints

  • 2 tsp salt

  • 1/2 tsp white pepper

  • 10 cm (4 inch) stalk lemon grass, finely chopped

  • 4 cloves garlic, crushed

  • lemon or lime juice

  • 90g (3 oz) brown sugar

  • 2/3 cup water


Method:

  1. Remove skin from the chicken and prick all over with a sharp skewer. Make a seasoning paste  with salt, pepper, lemon grass, garlic and lemon or lime juice and rub well into the chicken pieces. Stand for 30 minutes.

  2. Mix brown sugar and water in a small saucepan, and bring to the boil, stirring to dissolve sugar. Simmer for 5 minutes.

  3.  Brush sugar syrup over chicken pieces and stand for a further 10 minutes. Brush again and put under the grill or over a charcoal barbecue to cook until done. Brush every few minutes with the syrup and turn occasionally.

  4. The chicken will be a shiny golden-brown with dark brown flecks and a rich barbecued flavor.
