Remove skin from
the chicken and prick all over with a sharp skewer.
Make a seasoning paste with salt, pepper,
lemon grass, garlic and lemon or lime juice and rub
well into the chicken pieces. Stand for 30 minutes.
Mix brown sugar
and water in a small saucepan, and bring to the
boil, stirring to dissolve sugar. Simmer for 5
minutes.
Brush sugar
syrup over chicken pieces and stand for a further 10
minutes. Brush again and put under the grill or over
a charcoal barbecue to cook until done. Brush every
few minutes with the syrup and turn occasionally.
The chicken will
be a shiny golden-brown with dark brown flecks and a
rich barbecued flavor.
