Ingredients

small chicken drumsticks

tbsp fish sauce (nuoc mam)
2
lemon grass roots, finely chopped
2
spring (green) onions, finely chopped
slat and pepper
3
tbsp vegetable oil
1
red chili, seeded and shredded
1
tsp brown or crushed palm sugar
1/2
cup roasted peanuts
Method:
Skin the
drumsticks if preferred, or prick all over with a
fork to allow the seasonings to penetrate.
Place in a dish
with the fish sauce, lemon grass, half the onions,
salt and pepper and set aside for 2 hours, turning
several times.
Heat the oil in a
wok and gently sauté the chicken until cooked
through, about 12 minutes. Add the chili, sugar and
peanuts with the remaining onions and toss on high
heat briefly. Serve with rice.
